Photo: A plate of corn-husk wrapped tamales is a Christmastime tradition in Mexican culture.

In Evans, Colorado, at Tamales from Heaven, José and Margaret Ornelas sell up to 300 dozen every week throughout the year. During the month of December, that number doubles. Members from the church where José is the pastor, the Platteville Assembly of God, volunteer their time several days a week to help meet the holiday quota, Margaret said.
